Evelyn's wedding dress will be designed by Ines Di Santo, and the super-trim star reveals that she's actually not going on a pre-wedding diet -- rather, she just watches what she eats.

"You know, I don't have a bridal diet. I'm a pescatarian, so I don't eat too many things. But you know, I'm gonna make sure I stay clear of the bread and all that stuff that will make me gain some weight. I don't have like a crazy diet that I have right now," she smiles.

But her enviable physique does require some work.

"I do a lot of stomach crunches. Cardio is definitely my number one, and some weight training," she dishes.

And is she experiencing any bridezilla moments?

According to Evelyn, only when it comes to her fiancé Chad!

"You know, he has a lot of ideas. He thinks outside of the box, and not necessarily things that I agree with. So it's hard trying to find that balance so he feels like he is included in what we're doing."

On their new VH1 eight-part series Ev & Ocho set to air in September, she dishes that the spinoff will focus on their real-life wedding and relationship -- fights and all.

"What I've noticed with a lot of dating shows with couples, you don't really see the real. Everything's all great, and everything's peaches and cream, and for me and him, we're like an open book," she stresses. "We speak about everything. We're very controversial with the conversations we have, but we're also just very real as to the things we deal with. ... Maybe Chad will get cursed out a couple of times. I'm just saying ... which he has," she laughs.
